Celebrate New Year's Eve in Style With Champagnes Under $50

Happy New Year's Eve! In anticipation of the big celebration on Friday night, you'll find tips for picking the perfect bottle of bubbly in this week's newsletter.

Personally, I think it's a shame to drink this effervescent gift from the gods only on New Year's Eve.

So I make a point to serve champagne and sparkling wines year-round, because bubbly sets the perfect mood for any celebratory event – from birthdays and anniversaries to graduation and Super Bowl Sunday.

Click to page 2, to learn more about some of my favorite, affordable champagnes.

This light, bubbly flavor also makes it the perfect match for every course of a meal, from appetizers to the main course and through dessert.

Note: Do not, however, serve a dry champagne with cake or any sweet dessert. A Demi-Sec or Asti from Italy works much better.

On page 3, you'll find a delicious scallop recipe that Chef Stephen Sands prepared for our December champagne and sparkling wine class.

This dish is a perfect complement to a glass (or two) of bubbly – and is certain to please your New Year's Eve guests.

Don't miss any of our January classes. The list is at the left, and you'll find more details at

From all of us at Culinaria Cooking School, we wish you and yours a safe, healthy, prosperous – and very delicious – 2011.
